Paleo Sweet Potato Waffle Breakfast Sandwich


Ingredients:
large eggs, divided
1 small/medium sweet potato, grated
1/4 tsp cumin
1/8 tsp paprika
1/8 tsp garlic salt
1 tsp oil, plus more for waffle iron and frying pan
1 cup kale, chopped
1/2 medium avocado, sliced
salt & pepper, to taste



Steps to prepare:
1. Heat waffle iron and grease well. Set aside.
2. In a medium mixing bowl, whisk 1 egg (or egg whites). Add in grated sweet potato– it should be around a heaping cup– plus seasoning and 1 teaspoon oil. Mix well until thoroughly combined. Once the waffle iron has fully heated, pack in sweet potato hash mixture into iron, covering all of the quadrants. Press the waffle iron down gently and allow the sweet potato to cook about 4-5 minutes until lightly golden.
3. While the waffle is cooking, sauté kale in a pan with oil over medium heat until slightly crispy, this should take about 3-4 minutes. Fry or scramble the egg in same pan (remove kale or keep it in, your choice).
4. Once the sweet potato waffle is ready, gently remove it with a butter knife and transfer it to a plate. Layer on kale, fried egg, and avocado slices. Finish with salt and pepper if you wish and enjoy!


Simple Muesli Breakfast



Ingredients:
½ cup plain 0% fat Greek yogurt or plain Coconut yogurt (for a diary free/vegan option)
½ tbsp chia seeds
¼ cup unsweetened muesli with a mix of nuts, dried fruits, and rolled oats
½ cup fresh sliced strawberries, whole raspberries, and whole blueberries
½ banana, sliced
1 tsp honey OR pure maple syrup

Steps to prepare:
1. Place yogurt into a bowl
2. Top with sliced banana and berries
3. Sprinkle with the muesli
4. Drizzle lightly with honey or pure maple syrup

Honey-Lemon Ricotta Breakfast


Ingredients:
2 slices of whole grain or gluten free bread
1/4 cup low fat ricotta
1/2 fresh lemon, juiced
1/2 tablespoon honey
4 figs, sliced
2 tablespoons pistachio pieces
1 teaspoon lemon zest

Steps to prepare:
1. Toast bread
2. Meanwhile, whip together ricotta, lemon juice and honey until smooth and creamy
3. Spread ricotta moisture evenly over each piece of toast, then top with sliced figs
4. Sprinkle with pistachio pieces and lemon zest
5.Enjoy!
